I live on top of a hill in a small town. It was a gorgeous day with a nice breeze so all of my windows were flung open.
While working at my computer I started to feel numbness in my face and began wondering what I was exposed to or might have eaten to cause the sensation. It wasn’t long until I realized there was a chemical smell permeating my home. I quickly ran to each window to see what was going on outside. And there I spotted it over a half a block away below my home a yard was being sprayed by a riding sprayer. I quickly closed my windows grumbling as I did so. This was 4:30 pm when my husband came home at 5:30 pm he could still smell the chemicals in our house and said it was even worse outside. I have been craving my mom’s homemade oatmeal chocolate chip cookies lately. I was going to make some energy bites and then I thought how can I make these a bit like my mom’s cookies. Her oatmeal cookies have chopped walnuts or pecans in them. I got thinking – why not blend the pecans in my cupboard into pecan butter? You must be able to. Confession time here. I am so off track. I have not been spending quiet time with the Lord. This leads to other issues in my life. I have not been eating right or exercising. Basically, I am going backward big time. 🙁
So I have been rethinking my strategy for life change. Somehow I have to get back to moving forward. Shutting off the news (which brings me down big time). I can’t change the world by being immersed in the election or the sadness and tragedy worldwide. I can be an element for change by listening to the truth of what Jesus said and allowing it to permeate my life. Instead of focusing on the brokenness and despair that the new portrays I can focus on the truth of the Good News (gospel).
Jesus said, “A thief comes only in order to steal, kill and destroy. I have came that they may have and enjoy life, and have it in abundance (to the full, till it overflows).“ John 10:10 AMP I have to look at what the thief (Satan) is using to steal, kill and destroy me. Some things I can do something about, some I can’t. I can turn off the television which steals my time and emotional energy. I can spend time meditating on the Word of God and praying, taking time to be quiet before the Lord so that He can speak into my heart. I can pray for those I love, that the Lord will guide them and keep them safe. Worrying about my loved ones and becoming distracted by some of the things they say and do that hurt and wound does not help anyone. I have such fond memories of making maple syrup with my family as a kid. In March we gathered buckets of sap from our maple trees in the woods and brought the sap home.
I have been in the mood for these energy bites for a while so this weekend I decided to go for. They really remind me of the gingerbread cookies I used to make and they are such a healthy options. The only sweeteners are dates and black strap molasses which is loaded with minerals and vitamins and much better for you. They are moist and chewy and deliciously spicy without being overly sweet. They are very satisfying and since they are filled with almonds and molasses they have protein, minerals and B vitamins. So thank you to Tasty Yummies for creating this awesome vegan, grain-free treat.
Grain-Free No-Bake Gingerbread Cookie Balls {Gluten-Free & Vegan}
makes 18-24, depending on the size
2 cups raw organic almonds, walnuts or pecans (I went 1 cup each of almonds and pecans)
6 Medjool dates, pitted
3 tablespoons unsulphered organic blackstrap molasses
1 teaspoon ground cinnamon
1/2-inch nub fresh ginger, peeled or 1/2 teaspoon ground ginger
dash ground cloves
dash ground nutmeg
pinch of sea salt
Put all the above ingredients in food processor and chop well.
