No Bake Energy Bites
If you are like me and craving some yummy healthy snacks this easy recipe is a good one. I have been surrounded by sweets at work and this past week they satisfied the cravings.
No Bake Bites
Combine 1 cup rolled oats
1/2 cup peanut butter
1/3 cup honey
1 cup sweetened coconut flakes
1/2 cup ground flaxseed
1/2 cup mini chocolate chips
1 tsp vanilla in a mixing bowl
Chill 30 min, then roll into balls. Store in an airtight container in the fridge up to a week.
I felt is was a little too sweet with the honey even with using unsweetened coconut flakes. I also did not include chocolate chips this time. You could throw in craisins or other dried fruits if you like.
