Since there are only two of us at home anymore I have really neglected cooking.  I like to make it simple, nutritious and delicious.  And when I make food I make enough for leftovers.  I really am not that crazy about cooking, but I really like eating.  🙂  chicken supper

So tonight we are having roasted chicken breast, roasted brussel sprouts and baked potatoes.  Leftover chicken will be used in salad for lunch and maybe a stirfry tomorrow night.  

I season the chicken breast liberally with paprika, garlic, salt, pepper and parsley and bake for 1.5 hours at 350.  I add the scrubbed potatoes after the chicken has been in a half hour.

When I pull the chicken out to rest I through the brussel sprouts in.  I use frozen for ease of cooking.

Roasted Brussel Sprouts

Drizzle olive oil over frozen brussel sprouts in baking pan and sprinkle with salt, pepper and garlic powder.

If your olive oil is hard like mine I just put a spoonful of it in the pan to melt and stir the brussel sprouts in.

I roast about 20 minutes at 450.  Stirring halfway through and at the last 2 to 3 minutes I added about 1/4 cup of chopped pecans.

I have adapted this recipe from the one linked below.  My husband didn’t care for it being sweet like the other recipe so I left out the honey and this time I don’t have any pomegranate seeds but I have craisins so I will put them in my half.  🙂
