Spiced Apple Oatmeal
This fall this has become one of my favorite breakfasts. I use whole rolled oats, but you could use steel cut oats as well.
First I chunk up one slightly tart apple leaving the skins on for more fiber and nutrition.
I cook these on medium low heat covered for about 10 minutes I don’t add any liquid since the apple sweats out juice fairly quickly.
I do watch it to make sure I don’t burn it at this point adjusting temperature as needed and giving it an occasional stir. Then I add 1/4 cup oats and 3/4 cup water.
Bring to boil, cover and simmer around 20 minutes more, stirring and checking to make sure you don’t let it dry up too much. Meanwhile chop up about 12 pecans.
After it is heated sprinkle liberally cinnamon and ginger to taste (I like ALOT of cinnamon) and about a teaspoon of honey.
Then stir in the pecans and serve with a bit of milk.
Yummy and warming to your tummy. Very satisfying breakfast that sticks with you all morning.
