I discovered I had no yogurt for my snack this afternoon so I decided to try the following:

1/3 cup coconut fiber (left overs from making coconut milk)

1/3 cup coconut milk

½ cup frozen blueberries

1 T chia seeds

Blended all together- delicious snack and only sweetened by the fruit!  ☺

Of course there is more fiber than listed above since there is the coconut fiber.  This is just a rough estimate of information.
